Lime and coriander (cilantro) chicken

Ingredients (serves 8)

  • 5 cloves of garlic
  • 1 tbsp grated lime zest
  • ¼ cup fresh lime juice
  • ¼ cup fresh coriander/cilantro, chopped
  • 1 tsp salt
  • ½ tsp ground pepper
  • 6 tbsp Casa dei Mezzo extra virgin Olive oil
  • 8 boneless, skinless chicken breast halves
  • Lime wedges for garnish. (Lemon can be used instead of lime)

Method

In food processor pulse first six ingredients. Add olive oil; process until blended. Pour into resalable plastic bag: add chicken and marinate in refrigerator for 3 hours. Preheat broiler. Place chicken on foil-lined baking sheer. Broil, turning once, 8-10 minutes, or until cooked trough. To serve, garnish with lime wedges.
