Green beans in walnut sauce with feta

Ingredients (serves 6)

  • 800 grams baby green beans, trimmed
  • 100 grams ( 1 cup) walnuts, roasted and coarsely chopped
  • ¼ Casa dei Mezzo olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon sweet paprika
  • ½ teaspoon ground coriander
  • ¼ cup coarsely chopped flatleaf parsley
  • ¼ cup coarsely chopped coriander
  • ½ small red onion, finely chopped
  • 60 grams feta, crumbled

Method

Cook green beans in boiling salted water for 3-5 minutes or until render, drain, refresh in iced water, then drain again.

Combine walnuts with the remaining ingredients except feta and season to taste with sea salt and freshly ground pepper. Combine beans and walnut sauce/mixture in a bowl, then scatter with feta.
