Enjoy this extra special chocolate cake recipe created in honour of our 2007 Casa dei Mezzo Music Festival!
200 gram dark chocolate minimum 54% cocoa
6 small eggs
250 gram unsalted butter
225 gram caster sugar
150 gram grated coconut
100 gram fine bread crumbs
10 ml litre black coffee
Method
Whip butter and sugar thoroughly.
Add one egg joke at a time.
Melt the chocolate and add the coffee.
Whip egg whites.
Mix coconut and bread crumbs into the butter/sugar mix and add the melted chocolate when lukewarm.
Fold the whipped egg whites into the batter and place in a buttered dish and bake at 200°C.
for about 35 min, try with a thin stick to see if it is done.
