Grated Carrot and Orange salad

Ingredients (serves 4-5)

  • 1 tbsp of Casa dei Mezzo Thyme Honey
  • 1 tbsp orange flower water
  • 3 tbsp lemon juice
  • 2-3 tbsp orange juice
  • 1 tbsp ground of flaked almonds
  • ½ tsp salt
  • 500 g carrots, grated
  • 2 oranges, each peeled and cut into 8-10 pieces
  • 1 tbsp of Casa dei Mezzo extra virgin olive oil
  • 2 tbsp pine nuts
  • Mint leaves, to garnish (optional)


  • Put the honey in a serving dish, then mix in the flower water and lemon juice and orange juices.

  • Add the almonds, salt, carrots and oranges.

  • Heat the oil in a small pan and sauté the pine nuts until golden, then remove from pan and add to the salad.

  • Toss the salad (if desired, garnish with mint) and serve or chill for later use.
